Accuracy (WBV)
A measure of how much information underpins an WBV, and therefore how likely it is to change as more data arrives. Higher accuracy usually means the animal has recorded progeny. Read more →
Akaushi
The Japanese Red (Brown) Wagyu breed, distinct from the dominant Japanese Black. Generally larger-framed with leaner marbling than Japanese Black. Read more →
AUS-MEAT marble score
The Australian visual marbling scale, running from 0 to 9 (with 9+ above the top). Assessed on the chilled carcase at the quartering site. Read more →
Backgrounding
The growing phase between weaning and entering a finishing program, usually on pasture, to add frame and weight before grain finishing. Read more →
Bloodline
The founding Japanese strain a Wagyu pedigree traces back to — chiefly Tajima, Kedaka (Tottori), Shimane and Fujiyoshi (Itozakura). Read more →
BMS
The Japanese Beef Marbling Standard, a 1–12 marbling scale used in Japan's carcase grading. Related to, but not an exact conversion of, the AUS-MEAT scale. Read more →
BREEDPLAN
The genetic evaluation system that produces WBVs for many Australian beef breeds. The Australian Wagyu Association has moved to Wagyu-specific breeding values (WBVs). Read more →
Carcase weight
The weight of the dressed carcase (hot or cold), a primary driver of an animal's commercial value alongside marbling. Read more →
Contemporary group
A set of animals managed alike (same mob, feed and season) so their performance can be fairly compared when estimating genetics. Read more →
Dressing percentage
Carcase weight as a proportion of liveweight. Higher dressing percentage means more saleable carcase per kilogram of animal. Read more →
EMA
Eye Muscle Area — the cross-sectional area of the rib-eye (longissimus) muscle, a measure of muscling and yield. Read more →
F1 / F2 / F3 / F4
Crossbred grades describing how far an animal has been bred up toward Wagyu: F1 ≈ 50%, F2 ≈ 75%, F3 ≈ 87.5%, F4 ≈ 93.75% Wagyu content. Read more →
Feeder
An animal sold to enter a feedlot for finishing, priced on liveweight (cents per kilogram) rather than as a carcase. Read more →
Fullblood
A Wagyu animal whose pedigree traces entirely to Japanese Wagyu, with no other breed introduced. Read more →
Genomic testing
Reading an animal's DNA markers (SNPs) to improve the accuracy of its breeding values, especially in young animals with no progeny. Read more →
Heritability
The share of the variation in a trait that is due to genetics, and therefore how strongly the trait responds to selection. Read more →
Hybrid vigour
The performance boost (heterosis) in a crossbred over the average of its purebred parents — strongest in fertility and survival traits. Read more →
IMF
Intramuscular fat — the fat deposited within the muscle that we see and score as marbling. Read more →
Kedaka (Tottori)
A Japanese Black strain from Tottori, associated with growth, frame and milk — a common growth complement to Tajima's marbling. Read more →
Kobe beef
A protected brand of Tajima-strain Japanese Black beef from Hyogo Prefecture meeting strict grade and origin criteria. Not a breed. Read more →
Kuroge Washu
Japanese Black — the breed behind essentially all marbling-focused Wagyu. Read more →
Long-fed
A finishing program of several hundred days on feed (often 300–450+ for Wagyu) that develops the deep marbling Wagyu is known for. Read more →
Marble fineness
How fine and evenly distributed the marbling flecks are, over and above the amount — increasingly measured as its own trait. Read more →
Mid-parent
The average of the sire's and dam's WBVs, which predicts a calf's expected genetic merit because each parent contributes half its genes. Read more →
MSA
Meat Standards Australia — an eating-quality grading system that predicts tenderness, juiciness and flavour, cut by cut. Read more →
Oleic acid
The main monounsaturated fatty acid in Wagyu fat, associated with a low melting point and the soft, buttery mouthfeel of the beef. Read more →
Ossification
The degree of bone-to-cartilage hardening, used as an indicator of animal maturity in carcase grading. Read more →
P8 fat
Fat depth measured at the P8 rump site, an indicator of finish and condition. Read more →
Percentile band
Where an animal's WBV ranks within the breed, from top 1% to bottom, making raw WBV numbers easier to interpret. Read more →
Progeny test
Assessing a sire or dam by the measured performance of its offspring — the most reliable, if slowest, source of breeding-value accuracy. Read more →
Purebred
A Wagyu animal bred up to a high Wagyu percentage (commonly ≥93.75%, F4) and registered as such — genetically almost all Wagyu, but not a Fullblood. Read more →
Seedstock
Breeding animals (and their semen and embryos) sold to produce the next generation, as opposed to feeders sold for beef. Read more →
Selection index
A single dollar-value number combining several WBVs by their economic weight, so animals can be ranked for a defined production goal. Read more →
SNP
Single Nucleotide Polymorphism — a DNA marker. Panels of thousands of SNPs power genomic testing and parentage verification. Read more →
Tajima
The Japanese Black strain from Hyogo (the basis of Kobe beef), prized for fine, abundant marbling at smaller mature size and slower growth. Read more →
Wagyu
Literally 'Japanese cattle' — the four Japanese beef breeds, of which Japanese Black dominates marbling-focused production. Read more →
WBV
Wagyu Breeding Value — an estimate of the genetic merit an animal passes to its progeny for a trait, expressed as a difference from a breed base. Read more →
