How the scales relate
Australia grades marbling on the AUS-MEAT scale from 0 to 9, with a 9+ above the top. Japan uses the Beef Marbling Standard (BMS) from 1 to 12, which feeds its A1–A5 quality grades. The United States uses Select, Choice and Prime. Each is assessed differently, so there is no official conversion — but the ranges line up closely enough to compare.

Frequently asked questions
How do AUS-MEAT and BMS compare?
They are closely related marbling scales but not an exact conversion. AUS-MEAT runs 0–9 (with 9+), and the Japanese Beef Marbling Standard runs 1–12. As a guide, AUS-MEAT MB 6–7 sits around BMS 7–8, and MB 8–9+ around BMS 9–12.
Where does USDA Prime sit against Wagyu?
USDA Prime is the top US quality grade, but it sits below where most Fullblood Wagyu marbles. Well-marbled Wagyu (AUS-MEAT MB 8–9+, BMS 9–12) is 'beyond Prime' on the US scale.
Is there an exact conversion between the scales?
No. The scales are assessed differently and there is no official one-to-one conversion. This converter is an indicative guide, not a grading tool — official scores are assessed on the chilled carcase.
